A perennial root vegetable in the sunflower family native to Eastern North America, this is a highly productive plant, growing to 6-10’. Raw tubers are sweet and crunchy with a nutty undertone of sunflower seeds. When cooked, they are even sweeter, with the consistency of a creamy potato. The tubers contain inulin, a complex carbohydrate that takes longer to break down than simple starches, thereby avoiding the ‘sugar spike’ that is of concern to diabetics. Do NOT dig in the Fall, but leave in the ground and dig throughout the winter for a fresh supply of nutritional produce. Each bag contains 6 tubers, of up to 4 different varieties.
