Jerusalem Artichoke
Jerusalem Artichoke
- Latin Name: Helianthus tuberosus
- Potential Plants ≈ 6
A perennial root vegetable in the sunflower family native to Eastern North America, this is a highly productive and nutritious plant, growing to 2-3.5 metres.
Tubers are sweet and crunchy with a nutty undertone of sunflower seeds when eaten raw, and even sweeter with the consistency of a creamy potato if cooked. Delicious eaten boiled, baked, pickled, raw or fried. The tubers contain inulin, a complex carbohydrate with a low glycemic index, are an excellent pre-biotic and help to balance blood sugar levels.
Do NOT dig in the Fall, but leave in the ground and dig throughout the winter once the stems have died back for a fresh supply of nutritional produce. Save your largest tubers and move directly to a new garden bed as you dig to encourage larger tuber growth and avoid this plant taking over your garden.
Domesticated by First Nations in Eastern Canada, this is a truly wonderful and 100% Canadian food!
Each bag contains .4 kg (1 lb), approximately 4-8 tubers.

I’ve been spoiled by Fiona’s chard and can no longer eat grocery store bought chard. Metchosin farm is a magical seed bank with some of the most unique and carefully created/birthed vegetables and fruits. If you live in the PNW her seeds will be the best thing you ever grow in your garden.

My seeds arrived less than a week after ordering, and so far everything I’ve planted is sprouting beautifully. I have every confidence my family will be feasting like royalty from our garden this summer. Thank you metchosin farm!
