Most commonly associated in Western culture as an ingredient in wild bird seed, millet has been cultivated for at least 10,000 years and is actually a decorative, nutritious and easy to grow cereal crop. Cooked, it can be used as a hearty porridge, couscous, fluffed like steamed rice or pureed with a consistency of creamy mashed potatoes. Millet is a good source of phosphorus, manganese and magnesium, and is gluten-free.This small seeded grass crop is fast growing and drought tolerant. It can also be used as forage for livestock.
