About Ping Tung Eggplant
Ping Tung Eggplant is a standout variety for gardeners in coastal or cooler climates, offering long, slender purple fruit that are both decorative and delicious. Unlike bulkier varieties that may struggle in mild conditions, Ping Tung reliably produces a steady crop throughout the summer months. The fruit are tender and flavourful, ideal for grilling, stir-frying, or adding to curries and stews. The upright plants feature attractive foliage and beautifully pendulous pinky-purple fruit, making them a stunning addition to edible and ornamental gardens alike.

Where Can You Grow Ping Tung Eggplant?
Best suited to Zones 4–9, Ping Tung prefers full sun and rich, well-drained soil. It grows well in raised beds, garden plots, or large patio containers, especially when positioned in a warm, sheltered location.

History and Historical Uses
Originally from Taiwan, this variety has become a favourite in gardens around the world due to its resilience and high yield. Asian eggplants like Ping Tung are valued in cuisines across East and Southeast Asia, appreciated for their thin skins, minimal seeds, and mild flavour.

Canadian Zone Information
Zones 8–9: Direct sow or transplant in full sun after soil has thoroughly warmed.
Zones 5–7: Start indoors 6–8 weeks before the last frost; transplant after danger of frost has passed.
Zones 4: Grow in a greenhouse or warmest microclimate; requires season extension for best results.

How to Grow and Harvest Ping Tung Eggplant

Planting: Start seeds indoors 6–8 weeks before final frost; transplant 45–60cm (18–24in) apart.
Watering: Keep soil consistently moist, especially during flowering and fruit set.
Harvesting: Pick when fruit reach 20–30cm (8–12in) long, before skin dulls and seeds harden.
Maintenance: Provide staking or cage support for best upright growth and airflow.

Seed Saving Tips for Future Supply

Select Best Fruit: Allow a few fruit to fully mature and turn dull purple or brown.
Harvest and Extract: Cut open fruit and remove seeds; rinse thoroughly.
Dry and Store: Lay seeds flat to dry in a cool, dark, well-ventilated space.
Viability: Properly dried and stored seeds last up to 5 years.
