About Carrot
Carrots (Daucus carota subsp. sativus) are a garden classic, loved for their sweet, crunchy texture and nutritional benefits. Packed with beta carotene, fibre, and essential vitamins, carrots are a versatile addition to any diet.
This variety is particularly suited to late spring planting for winter harvesting. As temperatures drop, the sugar content in the roots increases, providing a naturally sweet flavour. Protect the tops from frost and animal damage, and you’ll enjoy these carrots as a delicious snacking treat all winter long.
Where Can You Grow Carrots
Carrots thrive in Zones 3-9, preferring loose, well-drained soil and full sun. They are well-suited to garden beds, raised beds, or deep containers for easy growing.
History and Historical Uses
Originating in Central Asia, carrots have been cultivated for over 1,000 years for their flavour and nutritional benefits. Once grown primarily for their aromatic leaves and seeds, modern carrots are prized for their roots, which are a staple in cuisines worldwide.
Canadian Zone Information
- Zones 8-9: Sow seeds in early spring or late summer for successive harvests.
- Zones 5-7: Plant seeds in late spring for a fall and winter harvest.
- Zones 3-4: Sow seeds in early summer and mulch heavily to protect roots for winter harvests.
How to Grow and Harvest Carrots
- Planting: Sow seeds 1cm (0.5in) deep in rows spaced 30cm (12in) apart. Thin seedlings to 5-8cm (2-3in) apart once established.
- Watering: Keep soil evenly moist for uniform root development.
- Harvesting: Harvest when roots reach the desired size or leave them in the ground over winter for enhanced sweetness. Protect tops with mulch to prevent frost damage.
Seed Saving Tips for Future Supply
- Allow Plants to Flower: Carrots are biennial, so let some plants overwinter and flower in the second year.
- Harvest Seeds: Once the flower heads dry and turn brown, cut them and place them in a paper bag to collect seeds.
- Dry and Clean: Spread seeds on a towel to dry completely. Separate seeds from any debris.
- Store: Store seeds in an airtight container in a cool, dark place. Properly stored seeds remain viable for up to 3 years.
