About Globe Artichoke
Globe Artichoke (Cynara cardunculus var. scolymus) is a stunning perennial in the thistle family, valued for its large, edible flower buds and architectural foliage. With silvery-grey leaves and towering stems, it makes a dramatic statement in both vegetable and ornamental gardens.

The fleshy flower buds, harvested before they bloom, are highly prized for their delicate flavour and tender texture. They can be steamed, boiled, roasted, or grilled, with the heart being a particular delicacy. Once established, these plants are drought-tolerant, long-lived, and productive for several years.

Where Can You Grow Globe Artichoke?
Globe Artichoke thrives in Zones 4-9, preferring full sun and well-drained soil. While perennials in milder climates, they can be grown as annuals in cooler regions.

History and Historical Uses
Native to the Mediterranean, artichokes have been cultivated for centuries as both a culinary delicacy and medicinal plant. Ancient Romans and Greeks prized them for their digestive benefits, while they became a staple in European cuisine. Today, they remain a favourite in Mediterranean dishes and gourmet cooking.

Canadian Zone Information
Zones 8-9: Direct sow in early spring or autumn for a perennial harvest.
Zones 5-7: Start seeds indoors 8-10 weeks before the last frost, then transplant outdoors.
Zones 4: Grow as an annual or overwinter with heavy mulching for protection.

How to Grow and Harvest Globe Artichoke

  • Planting: Sow seeds 6mm (1/4in) deep, spacing plants 90cm (3ft) apart.
  • Watering: Keep soil evenly moist but well-drained.
  • Harvesting:
    • Pick buds before they fully open for the best texture.
    • Cut just above the stem with a sharp knife when buds are firm.
  • Maintenance: Remove spent flower stalks to encourage continuous production.

Seed Saving Tips for Future Supply

  • Allow to Flower and Seed: Leave some flower heads to fully mature and dry.
  • Harvest Seeds: Collect seeds once flower heads turn brown and dry out.
  • Dry and Clean: Separate seeds from husks and allow them to fully dry.
