Lovage

Lovage

Levisticum officinale

Lovage is a robust and long-lived perennial herb prized for its strong, savoury flavour reminiscent of celery. Every part of the plant is edible, from the leaves and stems to the seeds and roots. A tall and architectural addition to herb or ornamental gardens, it can reach up to 2 metres in height and produces clusters of yellow-green flowers that are loved by pollinators. The flavourful leaves can be added fresh to soups, stews, and salads or dried for year-round use, while the seeds are commonly used as a spice or in baking.

Where Can You Grow Lovage?
Lovage thrives in Zones 3-9 in full sun to partial shade. It prefers deep, rich, and moist soil with good drainage. Once established, it is hardy, drought-tolerant, and will return year after year. A great addition to herb gardens, perennial borders, and pollinator patches.

History and Historical Uses
Native to southern Europe, lovage has been cultivated since ancient times for both culinary and medicinal purposes. Traditionally used to aid digestion and reduce inflammation, it was also favoured in medieval cookery for its robust flavour. In modern gardens, it remains a favourite for its versatility and ease of growth.

How to Grow and Harvest Lovage

Planting: Sow seeds indoors 6–8 weeks before the last frost or direct sow after frost. Space 60cm (24in) apart.
Watering: Water regularly, especially in dry periods; prefers moist soil.
Harvesting: Harvest leaves as needed once the plant is established. Collect seeds when flower heads turn brown.
Maintenance: Cut back after flowering to encourage fresh growth; divide clumps every few years.

Seed Saving Tips for Future Supply

Select Mature Plants: Allow several flower stalks to develop and dry on the plant.
Harvest Seeds: Collect seeds once they turn brown and dry fully on the stem.
Dry and Store: Spread seeds out to dry for 7–10 days in a cool, airy space.
Store: Store in an airtight container in a cool, dark place. Seeds remain viable for 3–5 years.
