Japanese Artichoke (Crosne)

Japanese Artichoke (Crosne)

Stachys affinis

Japanese Artichoke, also known as Crosne, is a unique and rewarding perennial grown for its small, knobbly white tubers. The flavour is delicate and slightly nutty, reminiscent of artichoke hearts with the crisp texture of water chestnuts. Plants form tidy green mounds through summer, producing abundant underground tubers in late autumn after the foliage dies back.

This unusual vegetable adds both novelty and culinary sophistication to the home garden and is especially well suited to permaculture and edible landscape designs.

Where Can You Grow Japanese Artichoke?
Thrives in loose, fertile, well-drained soil in full sun to partial shade. It performs well in coastal British Columbia and other temperate regions. Once established, plants spread gently and return reliably each year.

History and Historical Uses
Native to Asia and introduced to Europe in the 19th century, Crosnes became particularly popular in France as a gourmet vegetable. Traditionally served lightly sautéed in butter or preserved by pickling, it remains a specialty crop prized by chefs and gardeners alike.

Canadian Zone Information
Zones 7–9: Reliable perennial; harvest after first frost for best flavour.
Zones 5–6: Mulch heavily to protect tubers through winter.
Zones 3–4: Grow in sheltered areas or lift and store tubers over winter.

How to Grow and Harvest
Planting: Plant tubers in spring 5–8cm deep and 30cm apart.
Soil: Loose soil is essential for clean, easy harvesting.
Watering: Maintain even moisture during active growth.
Harvest: Dig tubers in late autumn; leave some in the ground for next season’s crop.

Tuber Saving Tips for Future Supply
Perennial Growth: Tubers left in soil will naturally resprout.
Division: Divide clumps every few years to maintain vigour.
Storage: Store harvested tubers cool and slightly moist until replanting.
