Khorasan Wheat Head

Khorasan Wheat

Triticum turgidum ssp. turanicum

Khorasan Wheat, also known as Kamut®; is an heirloom variety that is easy to grow and highly adaptable, producing large golden seed heads with striking black awns.

Highly nutritious and naturally high in protein, Khorasan wheat can be enjoyed as whole wheat berries, added to soups and salads, or ground into a flavourful flour for baking. Beyond its culinary uses, the tall, decorative seed heads make a stunning addition to dried floral arrangements.

Where Can You Grow Khorasan Wheat

Khorasan Wheat thrives in Zones 3-9, preferring full sun and well-drained soil. It performs well in diverse growing conditions, making it an excellent choice for both home gardeners and small-scale grain production.

History and Historical Uses

This ancient grain has been cultivated for thousands of years, tracing its origins to Western Asia. Valued for its rich, nutty flavour and excellent digestibility, it remains a favourite for traditional and artisanal baking. Its large, golden kernels and high nutritional content set it apart from modern wheat varieties.

Canadian Zone Information

  • Zones 8-9: Sow seeds in autumn for a spring harvest.
  • Zones 5-7: Direct sow in early spring or autumn for best results.
  • Zones 3-4: Plant in spring once the soil is workable for a late summer harvest.

How to Grow and Harvest Khorasan Wheat

  1. Planting: Broadcast seeds or sow 2-3cm (1in) deep in rows spaced 15-20cm (6-8in) apart.
  2. Watering: Keep soil evenly moist during germination; mature plants are drought-tolerant.
  3. Harvesting: Cut wheat when heads turn golden brown and grains are firm, usually in mid to late summer.
  4. Processing: Allow harvested wheat to dry, then thresh to separate the grains from the chaff.

Seed Saving Tips for Future Supply

  1. Allow to Fully Mature: Leave some seed heads on the plant until completely dry.
  2. Harvest Seeds: Cut dried seed heads and store in a cool, dry place.
  3. Thresh and Clean: Gently separate seeds from the chaff by rubbing heads between your hands or using a sieve.
  4. Store: Store cleaned seeds in an airtight container in a cool, dark place. Properly stored wheat seeds remain viable for 3-5 years.
