Purslane

Often pulled out as a weed, this prolific plant is highly edible and literally packed full of antioxidants! Long tender stems of small fleshy leaves add an appealingly crunchy texture and fresh lemony flavour to salads. Can be cooked in any recipe that calls for spinach or chard.  Self-seeds easily.
