The Heavenly Herbs Collection brings together five fragrant herbs prized for both their culinary versatility and traditional medicinal uses. From the sweet-licorice aroma of Korean Licorice Mint to the calming properties of Catnip, each variety will elevate your dishes, teas, and home apothecary all season long.
Where Can You Grow
These herbs thrive in full sun to part shade with well-drained, fertile soil. Sow in dedicated herb beds, containers, or border fronts. Regular watering and occasional feeding with compost tea will keep foliage lush and flavours at their peak.
History and Historical Uses

Korean Licorice Mint: Valued in Korean and Chinese medicine for digestive relief and a soothing, sweet mint flavour.

Dill: Ancient Mediterranean staple, seeds and leaves used to aid digestion and freshen breath.

Parsley: Revered since Roman times as a decorative garnish and a mild diuretic.

Lemon Balm: Medieval European favourite for its lemon-scented leaves and calming, antiviral infusions.

Catnip: Traditional remedy in Europe and North America for insomnia, anxiety, and digestive woes.
Canadian Zone Information
Zones 3–9: Direct-sow Dill, Parsley, and Catnip after last frost; start Korean Licorice Mint and Lemon Balm indoors 4–6 weeks before transplanting to extend harvest.
How to Grow and Harvest

Sowing: Sow seeds ¼ in deep in moist soil; keep evenly moist until germination.

Spacing: Thin to 12–18 in apart for good air circulation.

Maintenance: Pinch back growing tips of mint and lemon balm to encourage bushiness; remove dill flower heads if you prefer leaf production.

Harvest: Snip outer leaves or stems as needed; harvest before full bloom for best flavour and potency.
Seed Saving Tips for Future Supply

Isolation: Space varieties at least 3 ft apart to avoid cross-pollination.

Collection: Allow selected flower heads (dill, catnip) to mature and dry on the plant; let mint and lemon balm go to seed if saving.

Cleaning & Storage: Gently thresh to release seeds; winnow away chaff; store airtight in a cool, dark place.
